No offense . . . but if I have to choose between broccoli and you, I’d probably choose the broccoli. The same goes for carrots, cauliflower, brussels sprouts, and (especially) kale! As kid who used to toss my veggies in the garage trash can when no one was looking, I’ve done a complete 180. Do not come between me and a vegetable. You won’t win.
Both Trader Joe’s and Whole Paycheck have Broccoli Slaw. It is just fresh shredded broccoli stalks and carrots in a bag. It is so simple and yet so tasty when tossed with the right ingredients.
Coleslaw always had too much mayonnaise for me. Besides, you shouldn’t need to smother cabbage in mayonnaise for it to be edible. This Broccoli Slaw Salad is tossed in a Fat Free Chinese Salad Dressing. You could alternately use a honey ginger vinaigrette, vegan caesar dressing, etc. I stumbled upon a Tangerine Vinaigrette in Whole Paycheck that would work beautifully in this simple salad.
SWEET BROCCOLI SLAW SALAD
Prep Time: 5 min
Serves: 2-3 . . . or just eat the whole thing!
INGREDIENTS:
2 c of Broccoli Slaw
1/4 c Cranberries
1/4 c Honey Roasted Peanuts
1/2 Apple (Pink Ladies are the best kind!), cut into bite-sized chunks (cut thick slices and then break up the slices into thirds)
1/4 c to 1/3 c Chinese Salad Dressing or your favorite slightly sweet dressing
1 tbsp Agave Syrup (optional)
INSTRUCTIONS:
1. Place all ingredients into a bowl and toss.
2. Enjoy!
